| It's
no secret America's restaurant scene is one of the best in the culinary world.
From New York City to San Francisco, the country's innumerable ethnic communities
rival with each other to offer culinary delight with rare quality and value, with
great originality but little pretentiousness. It
is hard to imagine a task more difficult for food lovers than choosing the best
restaurants in the United States. We sifted through hundreds of reports, ate thousands
of meals, and traveled millions of miles. Like an Ivy League admissions committee
able to put together a class consisting solely of valedictorians, we agonized
about overstocking the list with luxurious French restaurants, big-city restaurants,
or those with famous chefs.
Along the way we adopted a couple of rules.
Despite having had some spectacular meals in newish establishments, we decided
to include only those restaurants more than two years old. And to much gnashing
of teeth we ruled out our favorite dives. Then we faced the music and assigned
each of our favorites a rank. We believe, you'll find a roster of restaurants
as fine as any in the world. So
